Ingredients
  • 2 Eggs and 1 extra yolk
  • 150ml Milk (I used semi skimmed)
  • 150ml Double cream
  • Ready made shortcrust pastry sheet
  • 100g or more of cheese (i only had cheddar but normally would use gruyere cheese)
  • 1 head of broccoli
  • 6 slices smoked bacon
  • 1 small chopped onion
Roll out the pastry to fit in your dish. I dont bother blind baking it as it doesnt seem to make much of a difference to me.  The last time i tried, some of the edges broke of and it didnt taste much different anyway!

Beat the 2 eggs and one extra yolk in a bowl and add the milk and cream. Set aside.
Fry the onion, broccoli and bacon. I fryed the bacon seperatly as it didnt all quite fit into my frying pan!
Add the fryed ingredients to your pastry lined dish, then grate on your cheese. Pour over the eggy milk mixture and then i like to sprinkle some grated nutmeg on top.
Put in the oven at 180 degrees c for about 25 minutes.

Its one of those meals you can cook during the day when you find the time and then leave to cool and eat later. I think that might be why it gets cooked so often in our house. Its stress free and easy. Usually we'll always have the ingredients in the house too so its always available! I've also made it with asparagus spears too, and the favourite version is onion, bacon and sliced tomatos ontop.

We had ours with a baked potato, and some naughty full fat mayo, YUM.
